Grilled aubergines

Serves 4
(… med citron, mint och balsamvinäger.)

Ingredients:

  • 2 medium aubergines
  • olive oil
  • 1 lemon
  • balsamic vinegar

Dressing:

  1. 1 dl extra virgin olive oil
  2. grated zest
  3. juice from the lemon
  4. 2 teaspoons of balsamic vinegar
  5. 1 teaspoon sugar
  6. 4 teaspoons of chipped menthe leaves
  7. salt and freshly grind black pepper.

How to do it:

Cut each aubergine in 8 thin slices and soak in salted water for about 1 hour. In the meantime – make the dressing in a bowl. Stir and set aside. Heat a grill pan until hot, pad the aubergines dry, put some olive oil on top of them and fry the aubergines 2-3 minutes on each side until they are golden brown and lightly charred. Arrange the slices upon a large plate and spoon the dressing over the top.Cover and set aside to let the aubergines absorb the flavours of the dressing. Sprinkle with remaining mint and serve.
